Wine at The OX
The OX will have a wine programme built around the table, not apart from it. Wine will accompany the charcoal and open-fire kitchen, and the choices will be made with steaks, aged cuts and the charcuterie section in mind.
The selection is still being put together. Until it is finalised and published, we are not presenting a wine list, producers or labels — we prefer to communicate only what is already settled.
Romania, France, Italy and Spain
Four regions are planned for the wine programme: Romania, France, Italy and Spain. This direction keeps a balance between local references and the European traditions that work most naturally alongside meat.
Exactly what each region will represent — areas, styles or proportions — will be communicated once the selection is finalised. We are not attributing wineries, appellations or vintages to the future restaurant at this stage.
Champagne and sparkling wines
Champagne and sparkling wines are part of the plan from the outset. They are categories that work both at the start of a meal and alongside rich or salty dishes, where acidity and bubbles balance the texture.
As with the still wines, the categories are settled but the specific selection has not yet been published.
Whisky, cognac, XO and premium spirits
The bar is conceived as a component with a premium profile, not as an annexe to the restaurant. The planned categories are whisky, cognac, XO expressions and other premium spirits — suited to the end of a long meal or to a short visit to the bar.
Specific brands and expressions are not announced. They will be available to consult once the official list is published.
Wine in the context of the meal
At a steakhouse, the choice of wine starts from the whole dish, not just the type of meat. The sauce, the seasoning, the amount of fat and the cooking method shift the right direction more than any fixed rule.
Because The OX will operate as a steakhouse and gourmet butcher in the same space, wine will be treated as part of the same decision: which cut you choose and how it will be prepared. The cuts can be seen in the steaks section of the menu.
